Three things (and a Dinner Disclosure, 9/18)

Dinner tonight. I took the rest of the roasted chicken, diced it, and tossed it in yogurt with peas, dill and smoked paprika. I thought about making it into a sandwich, but then decided to do a little panzanella action. I toasted some bread, cubed it and folded it in. Very tasty.

Thing 3

Makin some stock with the bones from the roast chicken. Oddly enough, I found another set of chicken bones in a freezer bag marked “Veggies for Stock.”

    SPICED WAFERS!!! My grandmother used to mail those to us in AZ. I’ll have to get Mir to bring some up to me or something. Or, you know, visit. Also, I am ashamed to say that I have never made stock, but maybe that will be some kind of seasonal resolution for me.

    My love for spiced wafers knows no bounds, except for seasonal ones. I’ve seen them for sale in the summer and, ugh. No. Can’t do it. Spiced wafers must be enjoyed in the fall.

    Oh stock is SO easy. Bones, whatever veggies you have (I keep a bag in the freezer and toss in the assorted odds and ends that I don’t use while cooking other things, or stuff that I know I’m not going to be able to use before it goes bad), water to cover. Bring to a boil and then simmer til it smells good. DO IT.

    Martha taught me to freeze the stock in cup and half cup portions in muffin tins and it’s genius. You end up with this bag of stock-hockey-pucks, ready to be used whenever you need a bit.
