Pumpkin Oatmeal

Another breakfast for dinner night.

I flagged this recipe back around Thanksgiving, but was carefully hoarding cans of pumpkin because of an alleged potential shortage. Of course, now I have two cans of pumpkin in the pantry.

Well, had two cans of pumpkin.

Perhaps inspired by Alexis, I decided to make it tonight. Half a can of pumpkin puree went into the oatmeal with various spices and was topped with maple syrup, cherries and chopped walnuts.

    Thanks for the shout out! Hmm, that looks yummy. I’ve got a can of pumpkin in my cupboard that needs to find a good home, perhaps in scones or bread.
